At this time of year the shelves are stocked with courgettes and they make a great summery addition to any dish. We like to use courgettes as faux pasta/noodles and toppings for salads… but the question we often get asked is WHY are they so good?

 

Courgettes have a very high water content just like the cucumber which is great for low calorie meals. Therefore they don’t have as many nutrients as some of their other veggie friends but are certainly great for you. They provide immune system-boosting vitamin C, and significant levels of potassium, which is key to controlling blood pressure. The skin also contains soluble fibre which slows down digestion, stabilises blood sugar and insulin levels and prevents constipation helping IBS.
